I don't know if this is a true chowder, but I love it and make it all the time.
Mix together the following ingredients and cook it until the potatoes are done:
2 cups milk (I use 2%)
1 can cream style corn
1 can corn (drained)
14 oz kielbasa sausage cut into bite sized pieces
1 crown of broccoli or 1 bag frozen broccoli
whatever celery is chopped and in my freezer (probably 3-5 stocks)
at least 1 cup carrots chopped into small bits (pretty much until I get sick of cutting the carrots)
1-2 potatoes cut into bite sized pieces
I always end up adding more milk because there is so much stuff in there that there isn't enough liquid to stir it
Once the potatoes are cooked through, add 2 cups of cheddar cheese. Mix and cook until melted in
For the record, this soup is better after it has sat for awhile. Normally it sits in my fridge and the next day it is better than the first day. If you cooked it in a slow cooker all day (and then added the cheese) it might do the same thing, I don't actually know.
