Pumpkin Chocolate Chip Muffins

Preheat oven to 400

Cream:
4 eggs
2 cups sugar
1 can 16 oz pumpkin
3/4 c oil
3/4 cup apple sauce

Add:
3 cups flour
2 tsp baking soda
2 tsp baking powder
1 tsp cinnamon
1 tsp salt

Fold In:
2 cups chocolate chipos

Cup in muffin cups and cook 16-20 minutes until you can insert a toothpick and it comes out clean

  1. Note to Anna: your muffins tins cook at different speeds. The nicer looking one cooks really fast and your muffins are always burned. Turn down the oven a little bit. The not as pretty one cooks about the correct amount of time at 400.
