Very easy Hawaiian crockpot chicken

Mom made this for us and we ate it with fried rice.  It is crazy easy and pretty good.

1 c pineapple juice
1/2 packed brown sugar
1/3 soy sauce (it says light...we used regular)
2 pound chicken

Add all ingredients to the crockpot and cook on low 6-8 hours and they should fall apart.

We thought adding pineapple toward the end would be good.

  1. Mom had said this was kinda blah and it needed garlic, onion, salt and pepper. So when making this, add some garlic and dried onion to the mix. Also salt and pepper each side of the chicken. The flavor was pretty good.

    Also, there is just one of me, so this made a lot. It is really good with sweet green salsa...which I will post on here sometime because I apparently haven't yet. I ate it with chips and salsa when I ran out of fried rice. I also think would be amazing in a salad. I haven't come up with a dressing yet, but I will keep you posted. Probably a citrus-y vinaigrette. Or just use the sweet green salsa as a dressing might work.
