Tortellini Soup

Tortellini Soup

1-1.5  lb. Italian Sausage
1 medium onion chopped fine(I use my frozen onion)
2 cloves of minced garlic

Cook until the sausage is cooked through

Add
3 beef bouillon cubes
3 1/4 cup water
1-1 1/2 c diced zucchini (I use one small zucchini)
2 cans Italian diced tomatoes(I blend for a moment-don't like the big chunks of tomato)
1 can kidney beans-drained and rinsed
1 can black beans-drained and rinsed
1 can whole kernel corn unddrained
1 tsp Italian seasoning
1/2 tsp salt

Heat to boiling

When boiling add 8 ounces cheese tortellini

Reduce heat and simmer until the tortellini is cooked about 15-20 minutes.
