Creamy White Chicken & Artichoke Lasagna


This recipe is from my neighbor Jen and it was pretty good.  I think it needed MORE WHITE SAUCE and it would have been better.  Would also have been good over penne or noodles or made into a pasta bake I think. 

2 c. cooked chicken
1 pkg. (8oz) mozzarella
1/2 c. sun-dried tomatoes
1 c. milk
1/4 c. fresh basil
1 can (14 oz) artichokes, chopped & drained
1/2 c. Parmesan cheese
2 (8 oz ea.) pkg. cream cheese, softened
1/2 tsp garlic powder
12-14 lasagna noodles, cooked

Heat oven to 350. Combine chicken, artichokes, parmesan, 1 c. mozzarella, & tomatoes.
Beat cream cheese, milk, and garlic til blended. Stir in 2 Tbsp basil. Mix half with chicken mix. Spread half of the remaining cream cheese mix on bottom of 9 x 13. Cover w/ 3 noodles and 1/3 of chicken mix. Repeat layers twice. Top with remaining noodles, cream cheese mix, mozzarella. Cover and bake for 25 min or heated. Sprinkle with remaining basil.

*Be sure to cook noodles. Yes, I've tested it (not purposely) and it's a little dry if you don't cook them. :)
**I don't use fresh basil, simply cuz I don't have it on hand. I do about 1 Tbsp of dried basil in the mix and then sprinkle whatever looks good on top.
