Country Frittata

This was super yummy!  We loved it (even Eric ate some of the green peppers in this...shocker).

Ok, you are going to get what I did which was mix of a frittata on Kraft's website (taking in some of the comments I saw) plus a mix of an AllRecipes recipe.

I will be making this again.

1 tub any flavor Philadelphia Cooking Cream divided (I used the italian one...it was really really good)

6 eggs
1/4 tsp. black pepper (I just did a couple grinds of my pepper)
2 Tbsp. butter
1 cup chopped green peppers
a couple teaspoons minced onion OR 4 green onions sliced (I did the couple teaspoons minced onion-I had that in my freezer)
1/4 cup chopped ham (I did MUCH more than this and am SO glad I did-like a heaping 1/2 cup)
1/2 cup Shredded Cheddar Cheese

I would think that bacon or sausage would be good too...as well as other colored peppers.

Reserve 1/4 cup cooking creme. Whisk remaining cooking creme with eggs and black pepper until well blended. Melt butter in 10-inch ovenproof skillet on medium heat. Add green peppers, onion and ham; cook and stir 5 min. or until crisp-tender. Stir in egg mixture. Cook on medium-low heat 8 to 9 min. or until center is almost set. (it took mine like 15 minutes-I guess my heat was too low!)

Heat broiler. Uncover frittata; sprinkle with Cheddar. Broil, 6 inches from heat, 2 to 3 min. or center is set and Cheddar is melted. (I was worried about this getting cooked through-my center was still not fantastic so I did it on a low broil for longer)

 Drizzle with reserved cooking creme-I totally forgot to do this and I think I am glad. I liked the crunchy cheese on top.
