Tomato Beef Chowyuk

 This was a lot like the one at the Shanghai that mom/gram loves so so much! 

Cut up vegetables: 
  • 1 medium onion. 
  • 1 green pepper. 
  • 1 tsp (ish) fresh ginger. 
  • couple cloves of garlic. 
  • 2 or 3 stalks celery
  • handful of grape tomatoes cut in half. 
Make sauce: 
  • 1 can beef broth. 
  • 2 TBS soy sauce. 
  • 1 TBS corn starch. 

Make the marinade. Marinade for 15 ish minutes. 

  • 3 TBS soy sauce
  • 1/8 tsp sugar
  • 1 tsp mirin
  • 1 TBS cornstarch
  • 1 lb beef (round, sirloin, of flank) cut thin. 
Heat oil in a pan. 

Cook beef in marinade and aromatics (onions, ginger, garlic, celery).

Add in green peppers and cook for like a minute. 
Throw in a handful of grape tomatoes cut in half. Cook for a minute. 

Add sauce. Bring to boil until it thickens. Serve on rice.

Chicken Taquitos

 Hailey loves this, and I and Eric do too. Based on best bites but it has evolved over the years


In a blender/food processor

1 brick cream cheese

1/2 bunch cilantro

2 cups chicken

1 can of the green salsa

2 TB lime juice

1 cup pepperjack

1 cup Monterey jack or cheddar

Either: 2 tsp chili powder, 1 tsp onion powder, 1/2 teaspoon granulated garlic OR 3-4 tsp taco seasoning

half bunch cilantro

Mix together in blender THEN

Mix in bowl with 2-3 cups chopped chicken (I season this with taco seasoning as well after I chop it up)

Put on tortillas

Spray tortillas with cooking spray and kosher salt

bake 425 15-20 min

Serve with sour cream and salsa

Amber Frison Creamy Tortellini Soup

 Ingredients

  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • Italian sausage
  • 1 tsp olive oil
  • 1 spring of fresh rosemary chopped or ½ teaspoon dried
  • 28 oz can diced tomatoes
  • 15 oz can tomato sauce
  • ½ tsp dried oregano
  • 4 large fresh basil leaves or ½ teaspoon dried basil
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 cups chicken stock
  • ½ cup heavy cream -Amber uses a block of cream cheese instead
  • 20 oz three-cheese tortellini
  • ½ cup shredded parmesan cheese + extra for garnish
  • fresh basil, to garnish
  • shredded parmesan cheese, to garnish
Instructions
  1. Place the onion, garlic, and Italian sausage and olive oil, and fresh rosemary in a 6-quart soup pot or dutch oven. Sautee over medium heat  until cooked

  2. Add in the diced tomatoes, tomato sauce, oregano, basil, salt, pepper, chicken stock, and heavy cream or cream cheese and stir to combine. Simmer for 20 minutes.

  3. Place the three-cheese tortellini into the soup and cook for 12-15 minutes or until the tortellini are tender and cooked through.

  4. Stir in the parmesan cheese.

  5. Serve and garnish with fresh basil and shredded parmesan cheese.
